Keto Vietnamese Spring Rolls

Chicken Filling
 1 lb skinless, boneless chicken thighs, cut into 1 1/2-inch pieces
 3 tbsp Asian fish sauce
 1 shallot (finely chopped)
 2 tsp minced garlic
 1 stalk of fresh lemongrass, tender white inner bulb only, minced
 3 tbsp chopped cilantro
 1 tbsp finely chopped mint
 ½ tsp salt
 ½ tsp black pepper
For Wrapping
 1 cup cilantro
 1 cup mint leaves
 6 scallions, cut into thirds
 9 cabbage leaves
 toothpicks
Spicy Dipping Sauce
  cup water
 3 tbsp fish sauce
 ½ tbsp minced ginger
 1 red chili

Chicken Filling

Step 1
Preheat the oven to 400° Fahrenheit.

Step 2
In a food processor, pulse the chicken until coarsely ground; transfer to a bowl.

Step 3
Add the fish sauce, shallot, garlic, lemongrass, chopped cilantro and mint, glucomannan powder, salt and pepper and mix with your hands.

Step 4
Line a large, rimmed baking sheet with parchment paper.

Step 5
Pour sugar on a plate. Using slightly moistened hands, roll the chicken mixture into 3-inch long logs. Roll the meatballs in the sugar until they are evenly coated.

Step 6
Place chicken logs to the prepared baking sheet and bake them for 15 minutes, until they are lightly browned and cooked through.

Wrap in Cabbage

Step 1
To prepare the cabbage leaves, place each cabbage leaf in a bowl of boiling water using kitchen tongs. Leave each cabbage leaf in the water for 2 minute, or until soft and bendy. Remove from the boiling water.

Step 2
Place a wilted cabbage leaf on a chopping board. Add your cooked chicken and herbs. Use toothpicks to hold the spring roll together.

Step 3
Begin by folding the bottom of the cabbage leaf over the fillings, fold in the sides then continue to roll up the entire spring roll.

Step 4
Place each spring roll on an oiled baking tray and bake at 350° Fahrenheit for 10-15 minutes.

Step 5
In the meantime, make spicy dipping sauce by mixing all the ingredients in a small bowl.

Step 6
Serve spring rolls with dipping sauce.
