Watermelon Salsa-Stuffed Avocado

 1.50 tsp lime zest
 ¼ cup lime juice
 ½ cup watermelon cubes
 1 cup cucumber, diced
  cup red onion, diced
 8 fresh basil leaves, chopped
 2 small Haas avocado

Step 1
Slice the avocados in half by cutting in a straight line around the pit. Gently stick the tip of the knife into the side of the pit and carefully pry it out of the avocado.

Step 2
In a bowl, mix the lime zest, lime juice and sugar in a bowl. Add the watermelon, cucumber, onion and basil and toss gently.

Step 3
Spoon the salsa into the avocados and serve.
