Seared Halibut with Strawberry Mint Salsa

Yields3 Servings

Strawberry Mint Salsa
 1 cup diced strawberries
 ¼ cup diced red onion
 1 tbsp fresh lemon juice (from about half a lemon)
 1 tsp dried oregano
  cup roughly chopped mint leaves
 salt and pepper
Halibut
 1 lb halibut fillets
 ¼ tsp paprika
 1 tsp cayenne powder
 1 tsp cumin
 ½ tsp dried oregano
 1 tsp sea salt
 1 tbsp olive oil

Strawberry Mint Salsa

Mix all ingredients in a bowl and set aside.

Halibut

Step 1
In a small bowl, combine the dried ingredients.

Step 2
Use a paper towel to pat dry both sides of the fillets. Rub the seasoning onto both sides of the fillets.

Step 3
Heat the olive oil in a skillet over medium heat. Place the fillets on the skillet (you should hear a sizzle when it touches the pan)

Step 4
Cook for 3-4 minutes on each side.

Step 5
Transfer to a plate and serve with strawberry mint salsa.
