Keto Strawberry Pop-Tarts

Strawberry Filling
 ¼ tsp xanthan gum
 1 tbsp water
 1 tbsp lemon juice
 ¾ cup fresh strawberries (sliced)
Pastry Dough
 1 cup almond flour
 ¼ tsp xanthan gum
 ¾ tsp baking powder
 1 egg
 1 tsp vanilla extract
 2 cups mozzarella cheese (8 oz) finely shredded
Vanilla Spiced Glaze
 2 tbsp grass-fed butter
 2 tbsp full fat coconut cream
 1 tsp vanilla extract
  tsp cinnamon

For the strawberry filling

Step 1
In a small saucepan, whisk together the sweetener and the xanthan gum.

Step 2
Whisk in lemon juice and water. Then add sliced strawberries.

Step 3
Place pan over medium low heat and bring to a simmer, stirring frequently. Turn heat to low and simmer until mixture is thickened and jam-like. Set aside while making the dough.

For the pastry dough

Step 1
Preheat oven to 350 degrees Fahrenheit.

Step 2
In a large, heavy saucepan, whisk together almond flour, sweetener, xanthan gum, and baking powder.

Step 3
Whisk in the egg and the vanilla extract. Then stir in the mozzarella.

Step 4
Place saucepan over low heat. Heat, while stirring constantly, until cheese melts and mixture becomes a dough.

Step 5
Turn dough out onto a sheet of parchment paper. Shape into a rectangle.

Step 6
Cover dough with another sheet of parchment paper. Roll out dough into a rectangle, about 9" x 12". Use the top sheet of parchment paper to line a baking sheet.

Step 7
Cut the dough into ten equal rectangles.

Step 8
Spoon the strawberry filling in the middle of five of the rectangles, while leaving some room on the edges.

Step 9
Cover the strawberry covered rectangles with the other five rectangles of dough.

Step 10
Using a fork, press down on the edges to form a seal. If dough gets sticky, dip your fork in some almond flour before pressing down. Place the pastries on the prepared baking sheet.

Step 11
Using a toothpick, prick holes in the top so steam can vent while they bake.

Step 12
Bake in the preheated oven for 19 minutes or until the tops are golden brown. Remove from oven and allow to cool for 5-10 minutes.

For the vanilla spiced glaze

While the pop tarts are baking, make the glaze. Mix together melted butter, Lakanto powdered sugar, full fat coconut cream, vanilla extract and cinnamon.
