Parmesan-Crusted Baked Cod

 0.75 lb boneless cod fillet
 ¼ cup butter (melted)
 2 tsp minced garlic
 ¾ cup grated parmesan cheese
 1 tsp paprika
 ½ lemon (optional)
 parsley flakes
 ½ bunch of asparagus (if using as side)

Step 1
Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.

Step 2
Whisk together the butter and garlic in a bowl. In a separate bowl, combine the parmesan and paprika.

Step 3
Coat fillet(s) with garlic butter mixture, making sure to coat both sides. Then pour the parmesan mixture over the coated fillets. Again, covering both sides. Be generous with the parmesan mixture here, I had a 0.75 lb fillet and I still had extra parmesan after two coatings.

Step 4
Sprinkle the filets with parsley. If you're cooking asparagus as a side, add to the baking dish at this time and drizzle with olive oil. Bake for 15 Minutes.

Step 5
Serve with lemon wedges and asparagus
