Keto Staple: Chicken Broth

Yields1 Serving

 1 organic whole chicken
 3 green onions stalks, cut into thirds
 1 carrot
 ginger, (we used pre-minced ginger)
 0.20 lb shiitake mushrooms
 ginseng (optional addition)

Pre-Clean Chicken

Step 1
Boil a pot of water over high heat.

Step 2
Once water has boiled, put the whole chicken in. Cook for 5 minutes to clean the chicken. Rinse in cold water.

Make Broth

Step 3
Refill the pot with water so that the chicken is covered and bring to a boil.

Step 4
Add green onions, carrot, ginger, ginseng and mushrooms. Once water has boiled, turn heat down to low and simmer for 40 minutes.

Step 5
Serve right away or store in mason jars.

Note: Depending on how much broth you want to make, you can repeat the process 1-2 more times. Just be aware that the chicken flavor will be less potent.
