Keto Pumpkin Cookies

Perfect for the fall — only 2 net carbs per cookie!

Yields28 Servings

 6 tbsp butter, softened
 2 cups almond flour
  cup solid pack pumpkin puree
 1 egg
 ½ cup sweetener (I used Lakanto Monkfruit Sweetener)
 ½ tsp baking powder
 1 tsp cinnamon
 ¼ tsp nutmeg
  tsp pumpkin pie spice
 pinch of salt

Step 1
Preheat oven to 350 degrees Fahrenheit.

Step 2
Combine all ingredients and mix until everything is well incorporated and dough forms.

Step 3
Line a baking sheet with parchment paper. Spoon cookie batter onto sheet (I used 1 TBSP as a guideline), and roll into balls.

Step 4
Gently press down on dough balls using the bottom of a measuring cup. If you want a little decoration, you can use a fork to make a pattern.

Step 5
Bake cookies for 20 minutes, or until golden brown.
