Keto Snickerdoodle Cookies


Sweet, cinnamon-y goodness! Pairs perfectly with a glass of milk 🙂

 1 ¼ cups almond flour
 2 tbsp coconut flour
 ½ tsp xanthan gum
 ½ tsp baking soda
 ½ tsp cream of tartar
 ¼ tsp kosher salt
 1 stick unsalted butter, room temperature
  cup xylitol
 1 ½ tsp vanilla extract
 1 egg
Cinnamon Sugar Mix
 2 tbsp xylitol
 2 tsp cinnamon

Step 1
Preheat oven to 375°F and line a baking tray with parchment paper.

Step 2
Add almond flour, coconut flour, xanthan gum, baking soda, cream of tartar and salt to a medium bowl. Whisk until thoroughly combined and set aside.

Step 3
Cream butter in a large bowl with an electric mixer until softened, about 2 Minutes. Add in sweetener and continue to cream until light and fluffy (about 6 Minutes). Add in vanilla extract and egg, mixing until incorporated.

Step 4
With your mixer on low, add in flour mixture (I did it 1/4 cup at a time)- mixing in everything until well-incorporated.

Step 5
Scoop out cookie rounds using a 1/2 tablespoon. Sprinkle half a teaspoon of cinnamon sugar mix over each cookie.

Step 6
Re-roll each cookie while folding in another half a teaspoon of cinnamon sugar mix. Repeat until all sugar mixture is incorporated.

Step 7
Be sure to leave some space between each cookie so they don't stick together. Bake for 7 Minutes minutes, or until just very lightly golden. Allow to cool for 10 Minutes minutes and enjoy!
